Red Deer (Cervus elaphus) are the fourth largest species of deer and are occasionally confused with elk, due to their similarity in appearance. Moose, elk, and Sambar Deer are larger. Only Red Deer males, referred to as Stags or Harts, have antlers which they begin growing in the spring shortly after they’ve shed their previous season’s antlers. Females are referred to as hinds. Red Deer may be hunted year round in Texas.  Stags are only harvested when they have hard antlers which is generally September thru March, but hinds can be harvested year round.

Red deer have a brown coat, with a red hue that becomes more pronounced in summer months. Stags grow a thicker darker grayer colored coat with short neck “Ruff” or mane in the fall. The largest Stags average 500 pounds and can weigh as much as 600 pounds.

Stag antlers are distinguished by the “crown” or “cup” of points at the tops of both beams. Five to six points per side is common but can exceed more than 20 per side. Their antlers are typically 28 inches in length and can exceed 36 inches. Due to the large size of Red Deer, Stags make an impressive mount.

Red Deer meat is delicious and is often the venison served in restaurants. It can be prepared as steaks or ground in order to make hamburgers or delicious meatloaf.

Red Deer are indigenous to Europe, the Middle East and North Africa. They were first introduced to Texas in Kerr County in the early 1930s.
